USDA shell-egg grades provide a common description of quality and weight under the AMS grading framework. Grade AA, A and B refer to defined quality characteristics and tolerances rather than nutritional superiority or an absence of pathogens. The voluntary official grading service involves USDA supervision and controlled use of the grademark. Grade, size and food-safety obligations should be evaluated separately.
USDA grades address shell condition and interior quality, including characteristics of the yolk and albumen. Lot tolerances and the point of examination affect the applicable grade criteria. The grade is not a simple promise that every egg has identical characteristics, and it should not be converted into a claim about nutritional superiority. AMS grade standards.
The standards distinguish quality grades from weight classes. A carton’s size designation is therefore not its quality grade. Procurement specifications should identify both the relevant grade and size, together with any other lawful requirements. Brown or white shell color is not itself a factor establishing USDA quality grade. USDA grading questions.
AMS offers official grading service under Part 56. USDA graders monitor grading and packing under the program and assess relevant facilities, sanitation and operating procedures. Participation is voluntary, but an applicant cannot use official identification as an unrestricted marketing graphic. The program’s supervision and product requirements give the grademark its defined meaning. Part 56.
AMS publishes separate grade provisions for origin and destination, with specified tolerances for lower quality and certain defects. Acceptance decisions therefore require the correct examination context and sampling basis. A single photograph of an egg or a supplier’s informal AA description cannot reproduce an official lot-grading determination. Use the applicable table and definitions together. Published grade provisions.
The official grademark applies to eligible product handled under the grading program. Labels and certification must stay within program controls, and records must connect the identified product to the service provided. A nonparticipating business must not imply USDA grading solely because it uses a familiar letter grade in a commercial description. USDA grademark explanation.
Specify the purchasing grade and weight class, verify whether official grading is required, and confirm the supplier’s program position. Separately assess refrigeration, Salmonella-related controls and other egg requirements under the responsible agencies. USDA quality grading does not make raw eggs pathogen-free, establish organic status or replace mandatory food-safety responsibilities. Grading-program scope.
